Xylitol is a sugar substitute and is found as a natural sugar alcohol in the bark of some types of wood as well as in fruits and vegetables. But humans also produce xylitol from glucose with the help of certain enzymes. Xylitol is called birch sugar because it was originally extracted from birch wood. Even today, it is obtained as a by-product in paper processing and manufacturing. It is very sweet and of high purity, although almost no energy is used in its production. Today, it is mainly beechwood that is used.
Compared to many other sugar substitutes or replacements, xylitol from Puraveda has one very big advantage: it can be used 1 to 1 just like sugar.
