Senchas are actually a Japanese speciality. Sen Cha means green tea in Japanese. But this Chinese Sencha is a real alternative to the more expensive Japanese qualities. After harvesting by hand, the tea leaves are steamed for 10 to 30 seconds. This keeps the leaf green, retains its grassy-floral aroma and stops fermentation. Then the leaves are dried with hot air and rolled over several stages into small green flat needles. Good Sencha qualities, like this one, can be recognised by the typical long, needle-like leaf in an even sort.

The rolling of the leaves breaks up the cell walls and the escaping ingredients can then lend their healing power to the infusion. Sencha has a particularly high content of catechins and bitter substances. Sencha has about the same caffeine content as Gyokuro, Tencha and coffee. However, the caffeine in green tea has a different effect than in coffee. Due to the interaction with other substances and the effect of caffeine in green tea sets in somewhat later, it has a more harmonious and lasting effect. light to dark green tea leaves.

The infusion is light green to light yellow and clear. Sencha extra fina tastes finely tart, slightly grassy and has a light fruity note.

Ideally protected for organic farming, the Qingshan tea garden is located on a mountainous peninsula with altitudes of up to 750 metres in the middle of a reservoir called Wuqiangxi.
