Description

Cassava has the botanical name Manihot esculenta and is a crop from the spurge family that has been cultivated for thousands of years. The cassava bush grows in tropical areas such as South America, Asia and Africa. Cassava is not suitable for raw consumption because the root contains hydrogen cyanide. However, the acid is removed during flour production, so it can be consumed without concern. Cassava flour has a strong binding capacity and is ideal as a gluten-free flour substitute.
