The chickpea (Cicer arietinum), also called field pea, is a plant species of the chickpea genus (Cicer) in the subfamily of the papilionaceous plants (Faboideae) within the legume family (Fabaceae). It is not closely related to the pea. Chickpea flour consists of ground chickpeas and is becoming increasingly popular. The flour is vegan, gluten-free, rich in fibre and a true all-rounder. It is suitable for thickening soups and sauces, as an egg substitute or as a classic cereal flour substitute in cakes and pastries. In conventional recipes, about 25% of the flour can be replaced by chickpea flour. Due to its slightly nutty taste, the flour also looks good in savoury dishes such as pizza and bread.
